RAISIN STUFFED CHRISTMAS COOKIES

Morning y’all! Christmas is around the corner and I literally can’t WAIT to prepare our dinner. Meanwhile, I’m working on lots of recipes and this one was absolutely a winner. I worked out the recipe for you. These old-fashioned raisin stuffed cookies are the perfect treats for Christmas. So, let’s give it a try!

    PREPTIME  50 minutes

    COOKTIME  15 minutes

    PORTION 30 cookies 

     INGREDIENTS

For the dough:

  • 700 grams of all purposed flour
  • 450 grams of sugar
  • 250 ml of almond milk
  • 220 grams of plant based margarine
  • 2 eggs
  • 4 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. vanilla extract
  • 1 tsp. salt.

For the filling:

  • 200 grams of sugar
  • 450 grams of raisins
  • 3 tbsp. cornstarch
  • 225 ml water
  • 1 tbsp. lemon juice
  • 1 tbsp. cinnamon

       METHOD

  1. First step is the dough. Mix margarine and sugar together and cream with a mixer until fluffy.
  2. Reduce the mixer speed to low and add the eggs, flour, almond milk and salt. Mix until all of the flour is incorporated.
  3. Finally, add baking powder, baking soda and vanilla extract and mix until all combined. The dough needs to be be very soft and sticky.
  4. Cover the dough with plastic wrap and let it rest in the fridge for at least 30 minutes.
  5. Now it’s time for the filling: Whisk together the sugar, cornstarch and 50 ml of water in a small saucepan, to form a paste.
  6. Stir in the remaining water, lemon juice and raisins. Cook over medium high heat and stir frequently, until the mixture is thick and the raisins plump, This will take about 5 minutes. 
  7. Let the filling cool before using.
  8. Preheat the oven to 200 degrees Celsius and line baking sheets with parchment paper. 
  9. Time to make the cookies! Use about 1/4 of the dough at a time and roll out the dough on a well-floured surface. The dough is very soft and sticky, so use as much flour as necessary to roll it out without it’s sticking. Cut the dough into rounds and place on baking sheet.
  10. spoon 1 to 2 tablespoons of the raisin filling onto the circle and then top with another round of dough. Just lay the circle on top of the filling. Seal them with a fork. Repeat until all cookies are ready.
  11. Bake the cookies for about 15 minutes until lightly golden brown. Let the cookies rest for about 10 minutes before serving.
